Election Day Canning

After I voted on Tuesday morning, there wasn't much more I could do but anxiously wait for everyone else to do the same.  Turns out the perfect way to channel the nervous energy of a candidate's wife on Election Day is to dive right into the last of the tomatoes.  By the time the polls closed, I had four gallons of trimmed, peeled, and quartered tomatoes ready to cook down into a huge batch of salsa.
