One Track Mind

Leave it to me to celebrate an ambitious week of posting about salsa by making more salsa!  In my defense, I did have more than 20 pounds of tomatoes sitting on my counter and a new canning recipe that I've been anxious to try, so it was the only responsible thing to do.  This recipe was a roasted tomato salsa and by all preliminary indications, this one's a keeper!
