Bean Sprouts

One of my favorite things about gardening is watching the seeds I've planted emerge from the ground as brand new little seedlings.  There's just something about how fresh and green they are - they  have so much character and are so full of potential!  And the bigger the seed, the more dramatic the entrance, so it's no surprise that beans rank pretty high on my favorite list.  I love how the ground heaves as the bean pushes up, giving away exactly where the new bean plant has taken root before you can even see the first hint of green.  There's also the way they displace large chunks of dirt as they burst through the surface of the garden soil and stretch out to stand perfectly straight and tall before unfurling their leaves.  Watching beans sprout is almost as satisfying as the first bean harvest itself!
